Happy Wednesday a/k/a Hump Day friends! If you are like me, there are many that like the convenience of smoothies for breakfast. I was a big fan but found recently that they were not keeping me full as long as they once did. I really enjoyed the smoothies and they were a great way for me to get my collagen peptides along with some fruits in my diet. Since they were not keeping me full, I decided I needed to find another way to make this happen. Honestly, I didn't research it much to find recipes or anything, I just got creative with what I had on hand. Not your typical recipe as there is no cooking to it, but here's my variation on the smoothie bowl: 1/2 cup of fat free Greek yogurt, half the serving of the frozen fruit that my husband bought me for my smoothies from Costco, 1/3 tablespoon of each ground flaxseed and chia seeds, 2 scoops of Vital Proteins Collagen Peptides. It isn't overly pretty to look at, but it is filling and tasty. I prepared several for my breakfasts this week. I decided to try something a little different this week and used mango and pineapple instead of the berries. Do you have a favorite breakfast? Is it filling? I would love to hear about it! S’mores Protein Bites Recipe You can find the original recipe here from Six Sisters' Stuff. The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings. I am not sure if I used a smaller scoop but I came out with 25 or so. There were a couple that were smaller.
I love it...a good reminder that what once worked may not always work. Constantly adjust and accommodate the changes in our bodies and lives!

DeleteI am very regimented: I have one egg with either bacon, toast or cheese. OR, if time is a crunch, like today, than a breakfast bar. I also drink coffee, but I will say that I stay filled to lunch time!
ReplyDeleteI enjoy changing it up from time to time, but probably tomorrow, I'll have 2 poached eggs and 1 piece of toast.
