Thursday Thoughts, July 25th


Happy Thursday a/k/a Friday eve friends!  Wow!  Is it just me or does this week seem to be flying by?  After watching some vloggers that I follow on YouTube move more toward low carb and remembering that my cardiologist told me that I should focus on eating lower carb to help with my weight loss.  For the most part, I don't eat a ton of carbs, but looking back, after my cardiologist said that, I noticed I started incorporating more carbs into my meal plan.  Not that it isn't allowed with WW but I have realized that I'm not doing as well as I would like.  For the time being, I'm going to focus on lowering my carbs daily.  My hope is that it will kick my weight loss into a higher gear until I can get my workouts back fully under control.  I know I want to start strength training again as well, but it's going to take me a minute to get everything to line back up.

Tuesday night, I prepared a low carb breakfast casserole.  There isn't a lot to it and I would have added some veggies, but I think until I do a little more research, I'm going to focus on the basics.  I purchased Chris and Heidi Powell's books years ago and I think I will use some of the options they list as my baseline.  It will give me a good place to start anyway.  I have done a little research about doing low carb and WW.  There are already things that I don't give in on.  I made the switch to higher fat milk from skim milk and went back to using butter years ago.  These are things I don't give on.  The fact of the matter is that I will gladly take the point hit if I want a little butter on something or a little milk.  I am curious to see what will happen with my weight loss with this change.  At the beginning of the year I noted that I really wanted to hit my weight loss goal this year and I think this may be a way to move forward in that direction.  The big trick is trying to do lower carb after DD returns.  I know I can do things like zoodles and spaghetti squash, but I will have to work at things to make it a little easier for all of us.  DH and I have been having chicken from time to time with our lunch, so I am going to start taking time to make some protein of some sort for us.  Honestly, I haven't tried to eat low carb in many years.  I'm looking forward to this experiment.  Have you ever tried low carb?  Were you successful?  I'm not sure I want to go so far as to do keto, but lower carb for sure.  Have a great day!

  1. I love me my carbs....but I KNOW that I have to keep the amount that I eat in check (insert sounds of sobbing right here). It is difficult sometimes..but the desire to be healthy, thin and fit outweighs it....most days!!!

  2. I have never tried low-carb because I love bread. :) I count calories, and I figure if I am working toward a healthier diet, then that's good enough. And hard enough!

 S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.

Meal Plan (and make a plan) Monday, April 27, 2025

Happy Monday, friends!  I hope you are looking forward to a good week!  It's time again to share my meal plan for the week.  I suspect breakfasts will be fend for ourselves.  Last week, I think we all ate a lot of cereal.  Lunches this week will likely be chicken salad and a pasta meal.  I, unfortunately, got hit with a round of vertigo at the end of last week that is wrecking havoc on my ability to move too much and it stinks.  I will be going back to what the allergy doctor suggested a couple of years ago...using my daily oral meds (Xyzal and Mucinex), as well as nasal rinse twice a day and nasal allergy spray.  While I know that vertigo for everyone isn't caused by the fluid in the ears, it seems to be for me most times when I've had it.  It's miserable when I can't even sit up without feeling nauseous. What's Cookin' Wednesday: Hungry Man Cornbread

  This recipe was my Mom's recipe that she submitted to the PTA years ago when I was in elementary school.  The recipe books were mimeographed and stapled together.  Hungry Man Cornbread (original recipe from memory) : 2 packages of cornbread mix (she used Martha White), prepared according to the package. 1 pound of ground beef, browned (usually with onion) American Cheese Slices Prepare your cornbread according to the package.  Brown your ground beef with onion, if desired, and seasonings of your choosing.  Prepare a 9 X 13 inch pan.  Pour half of your cornbread mixture (or if you prepare them one at a time, put one package of cornbread mix, prepared) in the bottom of the pan.  Top with your ground beef mixture, then top the ground beef mixture with Cheese Slices.  Top all of this with the other half of your prepared cornbread mix.  Cook on 400 for about 20 to 30 minutes until a toothpick comes out clean.
