What's Cookin Wednesday, May 22nd

Happy Wednesday friends!  Hope your week is going well.  The previous muffin recipe turned out pretty well, but I decided to try a different one.  The muffins, honestly, I didn't focus on the points simply because my daughter doesn't need to focus on that.  I'm focusing more on getting her protein.  I used this recipe as my guide:  Weight Watchers One Point Chocolate Chip Pecan Muffins .  First off, I think I might have been better served to double the recipe or use the mini-muffin cups because these turned out to be flatter and more cookie-like rather than muffin like in my opinion.  I used the same recipe as a base and used my new donut pan to cook it.  Although this time, I used 2 Tbsp of mini chocolate chips.  Using that recipe and making it in the donut pan, it's 2 Freestyle SmartPoints.   I think it's pretty tasty and my children were not complaining that I baked.  I hope you try it and enjoy it!

Meal Planning Monday, May 20th

Happy Monday friends!  I hope everyone had a fantastic Mother's Day and a wonderful following week.  It's been a little stressed around our office because I have a co-worker out of the office on vacation.  I am glad she is able to go, but oh we miss her when she's gone!  Meal planning and preparing has been a struggle in the last week or so.  I've been experiencing some stomach issues, so I've struggling with my food.  This week, however, I am DETERMINED to get things together.  My goal is to make lunches for my family the night before.  It may not happen EVERY night, but it's a goal.  For dinners this week, the general plan is cauliflower tikka masala, a taco salad (I bought some meatless crumbles that I hope are the correct ones), ravioli and marinara sauce, breakfast for dinner, smothered bean burritos or possibly a casserole instead but haven't decided and roasted veggie bowls with quinoa, we may have a sandwich night, but things are a ...

Thursday Thoughts, May 9th

Happy Thursday a/k/a Friday eve, friends!  I hope everyone is having a great week so far.  We're inching our way to the weekend!  Something happened last week, in fact, one week ago today that gave me some food for thought.  I don't know about the rest of you, but I have struggled with self confidence for a number of years.  After seeing my chiropractor last week, I mentioned that I felt like I needed to redo my hair, when I heard the response, yeah because you look like a hot mess.  I was heading out after work to go to a Women's Conference, which was amazing, by the way, and as I was going by myself and meeting others there, I was a little hesitant.  I had a migraine the night before and didn't make it to church, so in the back of my mind, I was thinking about the possibility of being judged or not being worthy or enough.  Do any of you struggle with self doubt and self confidence too?  No?  Just me?  Fear is often part of my vo...

What's Cooking Wednesday, Mary 8th

Happy Wednesday a/k/a hump day, friends!  I am looking forward to a wonderful Wednesday.  As the week continues, I'm feeling more positive about my food choices.  I know I mentioned my DD has decided to go vegetarian.  As such, I've been trying to find some additional sources of protein for her.  I keep seeing those in the WW community talking about the Kodiak Cakes and making muffins and the baked donuts out of them.  Last time I went to Costco, I bought a big box.  I decided to make my DD some muffins using the Kodiak Cakes as my base.  It will be a good addition of protein.  I used this base recipe as my test recipe.  Kodiak Cake Chocolate Chip Muffins 1 cup of Kodiak Cake Mix 1 cup of Water 2/3 cup of milk 1 egg Whisk together your ingredients.  Spray your muffin tin or use liners (I use liners).  Add your fruit or your chocolate chips (in my case chocolate chips since my daughter enjoys chocolate chip muffins)....

Tuesday Talk, May 7th

Happy Tuesday friends!  I hope you had a motivating Monday and are looking forward to a terrific Tuesday!  I will be honest, with me not feeling 100 %, I was a little frustrated with my eating yesterday.  I think I am struggling mentally because I wasn't able to eat for most of last week.  Today will be better though!  I am determined that it will be.  Let's talk for a minute about protein and why it is beneficial to your weight loss efforts.  I know growing up that my dad was a meat and potatoes guy.  Mom made so many meals based around meat.  I am not saying that's a bad thing, but now that my daughter has decided she wants to be vegetarian, I'm realizing that, like my Mom, I focus a LOT on meat.  This is definitely going to be an adjustment process for sure.  I feel like I'm making the same things over and over again, but I'm trying.  This week I'm going to try to add a meal I haven't made before, but I'm hoping everyone w...

Meal Planning Monday, Mary 6th

Happy Monday friends!  Last week didn't go as well as I'd hoped because I planned meals that I didn't get to cook between not feeling well and then being at the Joy Conference with my church, I didn't spend a lot of time cooking.  I am struggling a little not to make the same meals over and over again.  The basic plan this week is bean and kale quesadillas, beans and rice, cauliflower tikka masala, breakfast for dinner, hot dogs (I have vegetarian hot dogs as well), Caesar salad and a leftover night.  I have really been struggling not to make the same things over and over again.  It's not easy when my go-to meals were loaded with ground beef.  I will adjust, it's just taking me some time.  Anyone have any great meat-less meals to share?  Hope you have a great day!

Simple Sunday, May 5th

Happy Sunday friends!  I hope you had a fantastic end of the week and are looking forward to a great week!  My Thursday and  Friday were busy but very enjoyable!  While it's been a rough couple of weeks food-wise, with me taking antibiotics that were causing stomach issues and me not being able to eat much, if at all and Canada Dry Ginger Ale was my temporary BFF, I expected and received a gain on the scale.  I showed a gain of 2.4 pounds this week.  This week, hopefully, I will be feeling better and I can actually eat like a normal person.   I enjoyed my time at the North Texas District Ladies, Joy Conference 2019 on Thursday evening and Friday.  It is always such a great time to fellowship and see old friends.  As I was looking at the pictures from Thursday night's service, I saw this one of me in purple.   After seeing it, I remember that there was one taken of me the Thursday night at the Joy Conference 2018:...

Wednesday, May 1st

Happy hump day friends!  Today I thought I'd talk a little bit about myself and my goals for the month of May and for this year.  I choose my word for the year and the word I chose was "transform".  While I suspect that we all know what transform means, I thought I'd share the definition that I looked up.  According to merriam-webster.com, transform means the following:   As a transitive verb 1a : to change in composition or structure b : to change the outward form or appearance of c : to change in character or condition : CONVERT 2 : to subject to mathematical transformation 3 : to cause (a cell) to undergo genetic transformation Why did I choose this word?  Aside from the Bible verse that struck such a chord with me, it is also because transform can cover multiple areas in my life from my weight loss journey to my budgeting skills to my relationship with Christ.  There are multiple areas that I want to improve this year.  H...
