Meal Planning Monday, April 29th

Happy Monday friends!  I hope this Monday finds you well and that you have a great start to the week!  In the spirit of honesty, it's been a rough few days and I haven't been as consistent as I need to be with my eating.  The antibiotics that I've been on making me sick to my stomach and often times I don't feel like cooking or eating.  Having a plan definitely helps though me not get so far off track.   For the coming week, the menu plan is:   Quesadillas, Caesar salad, smothered bean burritos, pizza bubble up casserole, cheeseburger and tot casserole and cheesy hashbrowns and baked potatoes.   To be honest, we may wind up having a "leftover" night or I may change one of these meals for a breakfast for dinner option.  It's always a good meal for us to have and will allow me to change things up a bit so that I will have meatless options for my DD16 now that she's decided she wants to go vegetarian.  It is definitely make ...

Tuesday Talk, April 22nd

Happy Tuesday friends!  I hope everyone had a wonderful holiday weekend!  It was a busy weekend but I enjoyed it so much.  I ran around on Saturday getting groceries and necessity items for the house, then came home and made cookie bars.  Sunday, we got up had cinnamon rolls before church and we enjoyed church service together.  After church, we had macaroni and cheese and cherry cobbler with ice cream.  Probably not the most on plan day I've every had, but I enjoyed the day and was back on track come Monday.  Striving to stay on track this week, especially after I had a loss on Saturday of 1.2.  After having to be on Prednisone for 5 days, which manages to increase my appetite.  I truly hope I start feeling better soon because I feel like I've felt bad longer than I would care to be.  Meal planning is definitely a must for me to stay on plan this week.  How do you get back on plan after you have gotten off track?  

Meal Planning Monday, April 8th

Happy Monday friends!  I hope everyone had a great weekend!  In keeping with my determination to regain that focus on my health, here's another edition of meal planning Monday.  Being transparent, we attended a wedding this weekend and my eating was not great, I mean, there was cake, pasta, bread...oh my!  I did partake.  What does this mean for me this week?  I will definitely have to make a point to keep an eye on my eating this week.   So, the question on everyone's mind, what's for dinner this week?  I have the following on our list for this week: Lazy Man Lasagna, Meatloaf and Mashed potatoes, bean and cheese enchiladas (or they may be burritos, I haven't decided yet), Pizza Bubble-Up Casserole, Burgers and Fries an Chicken Caesar Salad.   Lunches will likely be turkey wraps or salads.  I have been enjoying "eggs in a basket" this past week.  I think if I continue that, I will add some fruit to it this week. ...

Friday Focus, April 5th

Happy Friday friends!  I have been feeling a little overwhelmed by life and my decisions of late.  Last night, I made a decision to put myself and my family first.  My health is important to me so I have decided to put it back on the front burner.  What does that mean exactly?  Well, I will get back into getting my workouts in, I will track my food, I will plan my meals.  Don't you do that anyway?  Well, I was, but then other things started stealing my attention.  I am feeling in a decent place and am hoping that I can get a meal plan in place for the next two weeks by Monday.  This weekend will be a little tougher as we are going out of town and there will be wedding cake involved.  Just a few weeks ago, I was so close to hitting 30 pounds lost again.  When I weighed in last Saturday, I found I was going the wrong direction again.  I almost feel like my body and I are at opposite ends of this battle.  I am proud to say ...

What I Ate Wednesday, April 3rd

Happy Wednesday!  I know it's been a minute since I've posted.  I hope everyone is doing well.  Since I wrote last, I have turned another year older.  This is what I ate on Tuesday.   Breakfast: Sandwich Thin Multigrain Roll (4 FSP), 2 Eggs (0FSP), [not pictured] my coffee (0 FSP) and So Delicious French Vanilla Creamer (1 FSP).  Breakfast Total: 5 FSP Lunch: 1 Ole Xtreme Wellness wrap (1 FSP), 3 slices/1 serving of Hormel Natural Choice Oven Roasted Deli Turkey (1FSP), 1 Laughing Cow Cheese Wedge (1 FSP), 1 Mini Persian Cucumber with Peel (0 FSP), Skinny Ranch Variation (1 FSP) [I'm not sure that was a full serving, but I'm counting it anyway], 1/2 package of Doritos 0.5 oz.
