Happy Thursday a/k/a Friday eve friends! How's your week going? So far so good for mine. I've had several blue dot days this week and I'm proud of that. I know meal planning and meal prepping can be a bit daunting, but I am really figuring out how beneficial it can be. At the present time, I only meal plan for a week at a time. Usually I have ideas in my head for a second week, but I don't usually write those down. I keep seeing folks posting that they plan for a month at a time. I am not sure I am quite ready for that yet, but I think I may try to go for 2 weeks, at least. With everyone's schedule being so crazy, I think it's really going to be even more important that I plan for our meals. My great hope is to take President's Day to prepare some freezer meals so that we are even more prepared for February and March. I am compiling recipes now to do just that. My primary focus is to choose meals that I know my family will enjoy that I can make work for us because we do have to accommodate some food allergies as well. To that end, I've been scouring Pinterest and YouTube to find things that I think we will like. I recently tried one that will make a good freezer meal called Lazy Man Lasagna and it was a hit. How do you prepare yourself for success?
S’mores Protein Bites Recipe You can find the original recipe here from Six Sisters' Stuff. The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings. I am not sure if I used a smaller scoop but I came out with 25 or so. There were a couple that were smaller.
I don't know what I want for dinner tonight, let alone a month from now! Anyone who can plan meals a month in advance have my utmost respect!
