Happy Hump day friends! I hope you are having a good week thus far. We're halfway to Friday! As many of you know, I am a member of WW f/k/a Weight Watchers. I have really been trying to work the plan, as the saying goes, and have been trying to find foods that I can enjoy, not get too bored of and will keep me full. I started following Kim (PrepWhisperer) on YouTube. I don't quite remember how I came upon her, but I enjoy her videos greatly. She shares her meals, recipes, tips and tricks. She shared her overnight oats recipe during her meal prepping videos, the specific one I cannot recall. I tried a couple of the variations and they are very tasty!
I had heard some not good things about overnight oats from various sources and after doing additional research, I think I understand why. A lot of the overnight oats recipes have yogurt and do not require heating. I don't know about you, but I like my oatmeal warmed up. Cold oatmeal is not my idea of tasty. Personal preference, I'm sure. Anyway, one of the wonderful things about the recipes that Kim has shared is that she also provides instructions on warming them up. I have tried the peanut butter version and the no bake cookie version and a variation on the triple berry because I only had blueberries. I made the Oatmeal Raisin Cookie version for my husband. I wrote the recipes down as I was watching her meal prep video so please forgive me if I left out any specifics. For the sweetener, I used a packet of Stevia. The downside is that it left a bit of an aftertaste. This is trial and error for me because I prefer not to use artificial sweeteners. Give these a try and I hope you enjoy these as much as I do!

Overnight
Oats – Peanut Butter Cookie version
1/3
cup Oatmeal
1
Tbs of PBFit (or other powdered peanut butter)
1
packet of Sweetener
1/2 cup Almond Milk/Water
Splash
of Vanilla Extract
Cook in the microwave for 1 minute. Stir.
Cook for 30 seconds. Stir. Add a banana after heating, if desired.
For
the no bake cookie variation, add 1 tsp of cocoa powder.
Overnight

Dash
nutmeg
Few
dashes of cinnamon

cup frozen berries
1/4
