It’s been a crazy few days.
Where to start? I started on Week
2 of my Back to Basics Challenge, which is to focus on 1 to 2 servings of lean
protein and continue with week 1’s focus of water and vitamin/mineral
supplement. I had to leave the office
for an emergency and wound up not eating the lunch that I had packed. Downside, I wound up eating Whataburger…Upside,
I still had lunch for today. I am really
trying to focus on planning better and managed to take a little time on Sunday
to meal plan/prep. I browned some ground
bison with some taco seasoning. I
portioned it out at 3 oz. each so I could have it this week in a wrap, salad,
or whatever.
Breakfast was a smoothie with 1/2 a serving of Dark
Chocolate Peanut Butter, 3 oz of spinach, 50 grams of banana, 1/2 cup of
blueberries, 1 tsp each of chia seeds and ground flaxseed and 8 oz. of
milk. Lunch was 1 head of romaine
lettuce, 1 cup of spinach, 1/2 cup or so of grape tomatoes, 1 oz of Hidden
Valley Ranch dressing and half a Wholly Guacamole Mini. Snack is Greek Yogurt mixed with 1 tsp of
honey and cinnamon and bell pepper strips.
Dinner last night was meatloaf, which I made in the crockpot, and DH
fixed the mashed potatoes. Tonight’s
dinner is chicken Caesar Salad with the Opa dressing made with Greek
Yogurt. It’s pretty strong so a little
goes a long way. The plan is to
brown more ground bison and cut up the lettuce for taco salad tomorrow night. That will save some time and hopefully I can get a workout in. We put out grass fed ground beef so I can fix
Salisbury Steaks in the crockpot for Thursday's dinner.
Not sure what we’ll have Friday yet as we normally order take out that
night. As you can see, we are sort of a
work in progress.
As for workouts, I worked out Saturday on the Arc Trainer
for 30 minutes, which was my 6th wedding anniversary. We went out for dinner that night. My non-scale victory was that I ordered what
I wanted and didn’t feel deprived, but I still took home about 1/2 of my
food. Sunday, we headed back to the Rec
Center and I did another 30 minutes on the Arc Trainer, but first my DH and I
played ping pong for about 15 minutes. I
have never been good at ping pong…it was more like chase the ball, but it was
fun. Last night, I didn’t do a
workout. After the emergency, my
allergies were crazy and I wound up taking a couple of Benedryl, shower and
calling it a night. DS15 and I headed to the Rec Center to visit my new friend the Arc Trainer (30 minutes) and I got 15 minutes of strength training in also.
